Kerry, a worldwide authority in taste and nutrition, has released its 2026 Global Taste Charts, giving the food and beverage sector a clear picture of how flavour preferences are shifting and where the next wave of innovation is likely to emerge.

Built on the expertise of more than 1,200 scientists, 100 flavour specialists, and in-depth consumer research from multiple regions, the latest edition mirrors how people are eating, drinking, and experimenting with flavours today. Positioned as both a practical tool and a future-focused resource, the charts are designed to help brands respond to rapidly changing tastes with insight and assurance.

With consumer expectations becoming more diverse and fragmented, the 2026 Taste Charts have grown from six to eight categories. These span Refreshing Beverages; Alcohol and Alcohol-Inspired Drinks; Tea, Coffee and Cocoa; Savoury Snacks; Sweet; Soups and Dressings; Meat and Meals; and Supplements. This expanded structure reflects the increasing overlap between indulgence and wellbeing, heritage and experimentation, as well as global trends and local preferences.

In Asia Pacific, the Middle East, and Africa, clear flavour movements are taking shape. Dragon fruit has moved beyond its exotic roots to become a familiar global taste, appearing across drinks, confectionery, and alcohol-style beverages. Meanwhile, sweet-and-spicy, or “swicy,” pairings are rising in popularity in regions such as Southeast Asia and South Africa, appealing to consumers looking for bold, multi-layered, and social-friendly flavour experiences.

Spice is also being approached with greater sophistication, with complexity now valued over sheer heat. Paprika-forward blends are gaining ground across Africa, while fajita seasoning ranks among the fastest-growing flavour profiles in Australia and New Zealand. At the same time, fresh and fruit-led tastes like watermelon, mango, pineapple, and mandarin continue to lead beverage innovation, supported by demand for hydration-focused and clean-label products.

Elsewhere, comforting flavours from the past are being elevated through premium twists and unexpected formats, while smaller, bite-sized treats suit increasingly busy lifestyles. In China, wellness-driven flavours inspired by traditional ingredients are on the rise, contrasting with the Middle East’s appetite for rich, indulgent profiles and bold, chocolate-centric creations.
